Vegetable Soup

A comforting vegetable soup packed with vibrant flavors and nutritious ingredients, perfect for busy weeknights or meal prep.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups mixed vegetables (e.g., green beans, peas, corn)
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion, sliced carrots, and sliced celery. Sauté for about 5 minutes until softened.
  2. Stir in minced garlic and cook for an additional minute until fragrant. Be careful not to let the garlic burn.
  3. Pour in the vegetable broth and add the diced tomatoes, including their juice. Stir to combine.
  4. Add the mixed vegetables, dried basil, dried thyme, salt, and pepper. Stir everything together.
  5. Bring the soup to a boil, then reduce the heat to a gentle simmer. Let it simmer for about 20 minutes, allowing the flavors to meld.
  6. Taste the soup, adding more salt or pepper if needed. If you prefer a stronger flavor, you can add more herbs.
  7. Serve hot, garnishing each bowl with fresh parsley for a touch of brightness.
