Taco Stuffed Mini Peppers are a fun and flavorful dish perfect as an appetizer or quick weeknight meal, appealing to both kids and adults.

Ingredients

  • 12 Mini Bell Peppers
  • 1 lb Ground Beef or Turkey
  • 1 packet Taco Seasoning
  • 1 cup Shredded Cheese (Cheddar or Mexican blend)
  • 1 cup Diced Tomatoes
  • 1 Onion (Optional)
  • Sour Cream (For Topping)
  • Fresh Cilantro (For Garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut each mini bell pepper in half lengthwise and remove the seeds.
  3. In a skillet, add the ground beef or turkey over medium heat. Cook until browned, about 5-7 minutes.
  4. Add the taco seasoning and diced tomatoes to the skillet and simmer for 2-3 minutes.
  5. Scoop the taco meat mixture into each halved pepper.
  6. Place the stuffed peppers on a baking sheet lined with parchment paper and sprinkle cheese over them.
  7. Bake for 15-20 minutes or until the peppers are tender and the cheese is melted.
  8. Remove from the oven, top with sour cream and cilantro, and serve.

Notes

Choose firm mini bell peppers for best results and avoid overfilling to prevent spillage.
