Ingredients

  • 2 sweet potatoes, diced
  • 1 can black beans, drained and rinsed
  • 4 eggs
  • 1 bell pepper, diced
  • 1 jalapeño, diced
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat the olive oil in a large skillet over medium heat, ensuring the bottom is coated.
  2. Cook the diced sweet potatoes until they begin to soften, about 10 minutes, stirring occasionally.
  3. Add the diced bell pepper and jalapeño, cooking for another 5 minutes until all vegetables are tender.
  4. Mix in the black beans and chili powder; season with salt and pepper.
  5. Create four wells in the mixture and crack an egg into each well.
  6. Cook covered until the eggs reach your desired doneness, about 5-7 minutes for runny yolks.
  7. Serve hot, optionally with warm tortillas or fresh avocado slices.
