Sweet Potato Black Bean Chili

A hearty and nutritious Sweet Potato Black Bean Chili that’s easy to prepare, packed with flavor, and perfect for family dinners.

Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, and chopped bell pepper. Sauté for about 5 minutes until softened.
  2. Stir in the diced sweet potatoes, chili powder, cumin, salt, and pepper. Mix well.
  3. Pour in the vegetable broth and add the can of diced tomatoes. Stir to combine.
  4. Increase the heat to medium-high and bring the mixture to a boil. Reduce the heat to low and simmer.
  5. Let the chili simmer for about 20-25 minutes until the sweet potatoes are tender.
  6. Stir in the black beans and cook for an additional 5 minutes until heated through.
  7. Taste and adjust the seasoning as needed. Serve hot.
