Spinach Stuffed Chicken Breasts

A delightful dish featuring tender chicken breasts stuffed with a creamy spinach and cheese filling, perfect for busy weeknights or special occasions.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, packed
  • 1 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a medium pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the fresh spinach to the pan and cook until wilted, about 2-3 minutes. Remove from heat.
  4. In a bowl, combine cream cheese, shredded mozzarella, sautéed spinach, and season with salt and pepper. Stir until well mixed.
  5. Using a sharp knife, carefully cut a pocket into each chicken breast. Spoon the spinach and cheese mixture into the pockets.
  6. Season the outside of the chicken breasts with salt and pepper on both sides.
  7. Place the stuffed chicken breasts in a baking dish, spaced apart.
  8. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  9. Once baked, remove from the oven and let cool for a few minutes before serving.

Notes

Use fresh spinach for the best flavor, or replace with well-drained frozen spinach. Consider using feta or goat cheese for different flavors.
