Spicy Cucumber Salad

A refreshing Spicy Cucumber Salad with a zesty dressing, perfect for any occasion.

Ingredients

  • 8 mini or Persian cucumbers
  • 1 green onion (ends trimmed and finely sliced)
  • Sesame seeds (for garnish)
  • 1 ½ tbsp low-sodium soy sauce (can substitute with tamari or coconut aminos for gluten-free)
  • 1 ½ tbsp rice vinegar or white wine vinegar
  • 1 tsp sesame oil
  • 1 tbsp honey or maple syrup
  • 2 large garlic cloves (minced)
  • 1 tsp crushed red chili flakes (adjust based on your spice preference)

Instructions

  1. Prepare the cucumbers: Wash and dry the cucumbers, trim off the ends, and slice at a 45° angle to create thin slices.
  2. Make the dressing: Whisk together the soy sauce, rice vinegar, sesame oil, honey (or maple syrup), minced garlic, and red chili flakes in a small bowl.
  3. Assemble the salad: Pour the dressing over the cucumbers in a mixing bowl and gently toss to coat.
  4. Garnish and serve: Transfer to a serving bowl, top with sliced green onion and sesame seeds, and enjoy.

Notes

For best results, allow the salad to sit for a few minutes after dressing to absorb the flavors.
