Crockpot Loaded Potato Soup

A creamy and hearty soup featuring tender potatoes, savory bacon, and cheddar cheese, perfect for chilly evenings.

Ingredients

  • 6 medium potatoes, peeled and diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth (or vegetable broth for a vegetarian option)
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Combine the diced potatoes, onion, minced garlic, and chicken broth in the crockpot.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
  3. Mash some of the potatoes with a fork for a thicker consistency if desired.
  4. Add the heavy cream and shredded cheddar cheese, cooking on low until the cheese is melted and the soup is creamy.
  5. Taste and season with salt and pepper as desired.
  6. Serve into bowls and top with crumbled bacon and sliced green onions.

Notes

Using Russet potatoes yields a creamier texture. Adjust seasoning before serving to enhance flavor.
