Crockpot Creamy Broccoli Cheddar Chicken

A comforting and easy-to-make dish that combines tender chicken, fresh broccoli, and a creamy cheddar sauce, perfect for family dinners.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups fresh broccoli florets
  • 2 cups cheddar cheese, shredded
  • Cooked rice, pasta, or mashed potatoes (for serving)

Instructions

  1. Prepare the chicken: Place the chicken breasts at the bottom of the slow cooker.
  2. Mix the sauce: In a separate bowl, combine the cream of chicken soup, chicken broth, garlic powder, salt, and pepper. Mix well and pour over the chicken.
  3. Slow cook the chicken: Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  4. Add broccoli and cheese: About 30 minutes before you’re ready to eat, add the broccoli and cheddar. Stir to combine.
  5. Shred the chicken: Once cooked, shred the chicken in the slow cooker.
  6. Serve and enjoy: Serve the creamy mixture over your choice of rice, pasta, or mashed potatoes.

Notes

Use fresh broccoli for best texture and avoid overcooking the chicken to prevent dryness.
