A deliciously easy way to combine breakfast favorites, these Sausage Pancake Muffins offer the comforting taste of pancakes combined with hearty breakfast sausage, making them perfect for busy mornings or a delightful weekend brunch.

Ingredients

  • 1 cup pancake mix
  • 1 cup water or milk (or almond milk for dairy-free)
  • 1/2 pound breakfast sausage, cooked and crumbled
  • 1/2 cup shredded cheese (optional; cheddar or mozzarella)
  • 1/4 cup maple syrup (optional)
  • 1 large egg

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, combine the pancake mix with water or milk until just mixed.
  3. Gently fold in the cooked sausage and cheese, adding maple syrup if desired.
  4. Crack the egg into the mixture and stir until fully combined.
  5. Pour the batter into each muffin cup, filling them about 2/3 full.
  6. Bake for 15-20 minutes, or until a toothpick comes out clean.
