High-Protein Cottage Cheese Blueberry Muffins

Delightful and wholesome muffins packed with protein and juicy blueberries, perfect for any meal or snack.

Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/2 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup blueberries (fresh or frozen)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix together the cottage cheese, eggs, honey (or maple syrup), and vanilla extract until smooth.
  3. Combine the whole wheat flour, baking powder, baking soda, and salt in another bowl.
  4. Incorporate the dry ingredients into the wet mixture gradually, stirring gently until just combined.
  5. Fold in the blueberries carefully.
  6. Fill the muffin cups about two-thirds full with batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Cool in the tin for a few minutes, then transfer to a wire rack to cool completely.

Notes

Don’t overmix the batter for a light texture. Fresh blueberries yield the best flavor.
