Protein Muffins

Delicious and nutritious protein muffins that offer a satisfying way to start your day or serve as a snack.

Ingredients

  • 2 ripe bananas
  • 1/2 cup almond milk
  • 1 cup rolled oats
  • 1/2 cup protein powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup honey or maple syrup
  • 1/2 cup chocolate chips (optional)
  • 1/2 cup blueberries (optional)
  • 1/2 cup pumpkin puree (optional)
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. Mash the ripe bananas in a large mixing bowl until smooth.
  3. Combine the rolled oats, protein powder, honey, almond milk, baking powder, baking soda, and salt with the mashed bananas.
  4. Add optional ingredients like chocolate chips or blueberries and fold them into the batter.
  5. Divide the batter evenly into the muffin cups, filling each about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean.
  7. Cool in the tin for a few minutes before transferring to a wire rack and enjoy.

Notes

Use ripe bananas for the best flavor and sweetness. Don’t overmix the batter to ensure muffins stay fluffy.
