Peanut Butter Protein Cookies

Delightful, nutritious cookies balance taste and protein, perfect for satisfying sweet cravings without guilt.

Ingredients

  • 1 cup peanut butter (smooth or crunchy)
  • 1/4 cup honey or maple syrup
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup oatmeal
  • 1/2 cup chocolate chips
  • 1/2 teaspoon baking soda
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the peanut butter, honey (or maple syrup), and vanilla extract until smooth.
  3. Add the egg and mix until fully incorporated.
  4. Combine the oatmeal, chocolate chips, baking soda, and salt.
  5. Scoop tablespoon-sized portions onto a baking sheet lined with parchment paper.
  6. Flatten each cookie down slightly.
  7. Bake for 10-12 minutes until edges are golden.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For chewier cookies, refrigerate the dough for 30 minutes prior to baking. Use quality chocolate chips for a better flavor.
