One-Pan Bold Honey BBQ Chicken Rice

A delicious and comforting one-pan dish combining tender chicken, fluffy rice, and vibrant vegetables, all in about 30 minutes.

Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Sear the chicken: In a large skillet over medium heat, season the chicken with salt, pepper, garlic powder, onion powder, and smoked paprika. Sear for about 5 minutes on each side until the chicken is nicely browned.
  2. Prepare the sauce: While the chicken cooks, whisk together the BBQ sauce and honey in a small bowl. Once the chicken is browned, pour this mixture over the chicken in the skillet.
  3. Add rice and broth: Next, stir in the rice and chicken broth. Mix everything together so the rice is evenly distributed.
  4. Simmer and cook: Bring the mixture to a simmer, then cover and reduce the heat to low. Let it cook for about 20 minutes, or until the rice is tender and has absorbed the liquid.
  5. Steam the vegetables: During the last 5 minutes of cooking, add the mixed vegetables on top of the rice and chicken. Cover the skillet to allow the vegetables to steam.
  6. Fluff and serve: After cooking, let everything sit for 5 minutes. Use a fork to fluff the rice before serving it alongside the chicken and vegetables.

Notes

Ensure to properly sear the chicken for maximum flavor. Adjust spice levels to your preference.
