One Pan Beef Enchilada Skillet

A comforting one-pan meal that brings the flavors of traditional enchiladas to your table in under 30 minutes.

Ingredients

  • 1 lb lean ground beef
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup bell peppers, chopped
  • 1 onion, chopped
  • 2 cups enchilada sauce
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Tortilla chips (for serving)
  • Shredded cheese (optional, for topping)
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Brown the beef: In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Cook the vegetables: Add the chopped onion and bell peppers to the skillet; cook them until softened, about 3-4 minutes.
  3. Combine ingredients: Stir in the black beans, corn, chili powder, cumin, and season with salt and pepper. Mix well.
  4. Add the sauce: Pour in the enchilada sauce and stir to combine everything evenly.
  5. Simmer: Allow the mixture to simmer for about 5-10 minutes until heated through and the flavors meld.
  6. Serve: Serve with tortilla chips, and feel free to sprinkle with shredded cheese and garnish with fresh cilantro if desired.

Notes

Substitutions: Ground turkey or chicken can be substituted for beef if desired. Fresh ingredients enhance flavor.
