Mushroom and Tofu Stir-Fry

A delicious and vibrant Mushroom and Tofu Stir-Fry that combines sautéed tofu, tender mushrooms, and fresh vegetables for a quick, nutritious meal.

Ingredients

  • 1 block firm tofu, drained and pressed
  • 200g mushrooms, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • Vegetables of choice (e.g., bell peppers, broccoli, carrots)
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Prepare the tofu: Cut the pressed tofu into cubes. Heat olive oil in a pan over medium heat. Once hot, add the tofu cubes and pan-fry until golden and crisp, about 5-7 minutes. Turn occasionally for even cooking.
  2. Sauté the mushrooms: Add the sliced mushrooms to the pan with the tofu. Sauté until the mushrooms soften, around 4-5 minutes.
  3. Add aromatics: Stir in the minced garlic and grated ginger. Cook for another 1-2 minutes until fragrant, stirring frequently to prevent burning.
  4. Introduce soy sauce: Pour in the soy sauce and stir well, allowing it to coat the tofu and mushrooms. Let it cook for another minute.
  5. Incorporate vegetables: If using additional vegetables, add them to the skillet. Cook until just tender, about 3-4 minutes, keeping them vibrant and slightly crisp.
  6. Season and finish: Season the stir-fry with salt and pepper to taste. Remove from heat.
  7. Serve: Dish out the stir-fry hot, garnishing with sliced green onions for a fresh finish.

Notes

For the crispiest tofu, ensure it’s well-drained and pressed before cooking. Choose vegetables that have similar cook times for even cooking.
