Low Carb Unstuffed Cabbage Casserole

A delicious twist on traditional stuffed cabbage rolls, this casserole combines vibrant flavors and healthy ingredients without the fuss of rolling.

Ingredients

  • 1 head of cabbage, chopped
  • 1 pound ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and the onion is translucent, about 3-4 minutes.
  3. Add the ground beef or turkey to the skillet. Cook until browned and fully cooked, breaking it up with a spoon. Drain any excess fat if necessary.
  4. Stir in the chopped cabbage, diced tomatoes (with juices), and broth. Season with paprika, salt, and pepper to taste. Mix thoroughly.
  5. Pour the mixture into a baking dish and cover it with aluminum foil.
  6. Bake for about 30 minutes or until the cabbage is tender.
  7. Remove from the oven, stir, and garnish with fresh parsley if desired.
  8. Serve warm and enjoy!

Notes

Ground turkey is a leaner option compared to ground beef. Feel free to use green or savoy cabbage depending on your preference.
