Low Carb Casserole

A hearty meal combining savory meat and fresh vegetables with creamy goodness, perfect for family dinners or meal prep.

Ingredients

  • 1 pound ground meat (chicken, beef, or turkey)
  • 2 cups cauliflower rice
  • 1 cup diced vegetables (bell peppers, zucchini, or spinach)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat a tablespoon of olive oil over medium heat in a skillet.
  3. Add the ground meat and cook until browned.
  4. Stir in the diced vegetables and cook for 3-4 minutes.
  5. Combine cauliflower rice, heavy cream, garlic powder, onion powder, salt, and pepper in a bowl.
  6. Add the cooked meat and vegetable mixture to the bowl and stir.
  7. Transfer the mixture to a greased casserole dish and top with shredded cheese.
  8. Bake for 25-30 minutes until cheese is bubbly and golden.
  9. Cool for a few minutes before serving.
