Ingredients

  • 1 cup lentils (green or brown)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can coconut milk
  • 2 cups vegetable broth
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Rinse the lentils thoroughly under cold water and set aside.
  2. Heat olive oil in a pot over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Incorporate the spices—curry powder and turmeric—and cook until fragrant, about 1-2 minutes.
  5. Stir in the rinsed lentils, coconut milk, and vegetable broth, mixing well.
  6. Bring the mixture to a boil, then reduce heat and let it simmer.
  7. Simmer for about 20-25 minutes until lentils are tender but not mushy.
  8. Season with salt and pepper to taste and serve hot, garnished with cilantro.

Notes

Lentil Curry stores well and tastes even better the next day. Check lentil doneness carefully to avoid overcooking.
