Keto Buffalo Chicken Quesadilla

A delightful twist on the classic quesadilla, packed with flavor and designed for those on a low-carb diet. Made with tender chicken, spicy buffalo sauce, and gooey cheese.

Ingredients

  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 2 tablespoons cream cheese
  • 2 low-carb tortillas
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • Chopped green onions (optional)
  • Ranch dressing (optional)

Instructions

  1. Mix together the shredded chicken, buffalo sauce, and cream cheese in a medium bowl until well blended.
  2. Heat the olive oil in a skillet over medium heat until hot.
  3. Place one low-carb tortilla in the skillet and spread half of the buffalo chicken mixture over one half of the tortilla.
  4. Sprinkle half of the shredded cheese over the chicken mixture.
  5. Fold the tortilla over and cook for 3-4 minutes on each side until golden brown and the cheese has melted completely.
  6. Remove the first quesadilla and repeat the steps with the second tortilla and remaining ingredients.
  7. Slice the quesadillas into wedges and serve with optional toppings like green onions and ranch dressing.

Notes

Customize with your favorite toppings. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
