Italian Grinder Bean Salad

A vibrant and hearty salad featuring a colorful mix of kidney beans, chickpeas, and fresh vegetables, perfect for a quick and nutritious meal.

Ingredients

  • 1 can kidney beans, rinsed and drained
  • 1 can chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Combine the kidney beans, chickpeas, cherry tomatoes, cucumber, red onion, and parsley in a large bowl. Stir gently to combine.
  2. Prepare the dressing by whisking together olive oil, red wine vinegar, salt, and pepper in a small bowl.
  3. Dress the salad mixture with the dressing, tossing well to coat.
  4. Let the salad sit for 10 minutes to allow the flavors to meld.
  5. Serve chilled or at room temperature.
