High Protein Blueberry Cake Donuts

These baked donuts offer a nutritious twist on a classic treat, combining fresh blueberries with high protein for a delightful snack.

Ingredients

  • 1 cup almond flour
  • 1/2 cup protein powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the almond flour, protein powder, baking powder, and salt in a bowl.
  3. Combine the applesauce, maple syrup, eggs, and vanilla extract in another bowl.
  4. Add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the fresh blueberries.
  6. Prepare a donut pan by greasing it well.
  7. Spoon the batter into each mold about 3/4 full.
  8. Bake for 15-18 minutes, or until a toothpick comes out clean.
  9. Cool the donuts in the pan for a few minutes before transferring them to a wire rack.

Notes

Don’t overmix the batter to prevent dense donuts. Store in an airtight container for up to 5 days or freeze for up to 3 months.
