Heart Healthy Rosemary Chicken Dijon

A delicious and easy dinner option with tender chicken and vibrant flavors, perfect for any weeknight.

Ingredients

  • 2 Tbsp Dijon mustard
  • 2 Tbsp lemon juice
  • 2 garlic cloves, minced
  • 1 tsp dried rosemary or 4 fresh rosemary sprigs
  • Black pepper to taste
  • 2 boneless skinless chicken breast halves (4 oz each)

Instructions

  1. Prepare the Marinade: In a shallow dish, whisk together Dijon mustard, lemon juice, minced garlic, rosemary, and black pepper.
  2. Marinate the Chicken: Add the chicken breasts to the marinade, turning to coat them well. Cover and let them marinate in the refrigerator for at least 1 hour.
  3. Preheat the Oven: Preheat your oven to 375°F (190°C).
  4. Bake the Chicken: Place the marinated chicken breasts in a baking dish. Cover with foil and bake for approximately 25 minutes, or until fully cooked and no longer pink inside.
  5. Serve and Enjoy: Once cooked, take the chicken out of the oven, remove the foil, and let it rest for a few minutes. Slice and serve with your favorite sides.
