Healthy & Easy Turkey Chili

A comforting and nutritious turkey chili packed with flavor, perfect for busy weeknights.

Ingredients

  • 1 pound ground turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) white beans (e.g., cannellini or great northern)
  • 1 can (15 oz) corn kernels, drained
  • 1 can (4 oz) diced green chilies
  • 2 cups chicken broth
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • Optional toppings: sour cream, shredded cheese, chopped cilantro, or avocado

Instructions

  1. Sauté the onion in a large pot over medium heat with some oil until translucent, about 5 minutes. Stir in the minced garlic and cook for another 1 minute.
  2. Add the ground turkey to the pot and cook until browned, about 6-8 minutes.
  3. Mix in the white beans and corn, warming through for about 2 minutes.
  4. Pour in the chicken broth and add the diced green chilies, cumin, chili powder, salt, and pepper. Stir until well combined.
  5. Simmer for 20 minutes on low heat, allowing the flavors to meld.
  6. Serve hot, garnished with your choice of toppings.

Notes

For thicker chili, let it simmer uncovered for an extra 5-10 minutes. Adjust spices to taste.
