Meal Prep Ground Beef Teriyaki

A delightful and convenient dish that combines the rich flavors of teriyaki with hearty ground beef and fresh vegetables, perfect for meal prepping.

Ingredients

  • 1 lb ground beef
  • 1 cup teriyaki sauce (preferably low-sodium)
  • 2 cups cooked rice (white or brown)
  • 1 cup mixed vegetables (such as bell peppers and broccoli)
  • 2 tablespoons green onions, chopped
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Brown the ground beef in a large skillet over medium heat, breaking it apart as it cooks. Drain excess grease.
  2. Add the teriyaki sauce to the skillet and bring to a simmer, cooking for about 5 minutes.
  3. Prepare 2 cups of cooked rice in 4 containers and cook the mixed vegetables until tender.
  4. Assemble the meal prep bowls by dividing the beef mixture and topping with mixed vegetables.
  5. Garnish with green onions and sesame seeds, cool, seal, and store.

Notes

Use lean ground beef to reduce fat and avoid overcooking the vegetables for better texture.
