Ingredients
4 Slices Genoa Salami
4 Slices Mortadella
4 Slices Sopressata
4 Slices Pepperoni
4 Slices Provolone (omit for dairy-free version)
Paleo Lime Mayo or store-bought mayo
Shredded Lettuce
Optional toppings: banana peppers, jalapeƱo peppers, roasted red peppers, black olives
Avocado Oil or Olive Oil
Apple Cider Vinegar

Instructions
Layer the meats: Start with a clean flat surface and layer the meat slices from largest to smallest, in this order: Genoa Salami, Mortadella, Sopressata, and Pepperoni.
Add mayo: Spread a thin layer of mayo on the stack of meats, leaving space at the top of the largest piece to prevent it from squeezing out when you roll.
Place the cheese: Add a slice of provolone on top of the mayo, about halfway down from the top of the layered meats.
Add veggies: Add a small handful of shredded lettuce to the lower half of the stack and top with any desired toppings.
Roll it up: With toothpicks nearby, gently roll the stack from the bottom, tucking in any fillings to make it as tight as possible.
Secure the roll: Once rolled, secure the outer edges of the meat with a toothpick.
Prepare the dipping sauce: In a small ramekin, combine 2 parts oil and 1 part vinegar, and sprinkle some Italian seasoning on top for dipping.
Serve and enjoy: Dip the roll-ups in the oil-vinegar mix and enjoy a delicious bite!
