Ingredients

  • 1 lb flank steak
  • 2 tablespoons garlic, minced
  • 4 tablespoons butter
  • 1 pound Brussels sprouts, halved
  • 2 medium sweet potatoes, cubed
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C) to prepare for roasting the vegetables.
  2. Toss the Brussels sprouts and sweet potatoes with olive oil, salt, and pepper in a large bowl until well coated. Spread them evenly on a baking sheet.
  3. Roast in the preheated oven for about 20-25 minutes, or until tender and caramelized on the edges, tossing halfway through.
  4. Season the flank steak generously with salt and pepper. In a large skillet over medium-high heat, melt the butter and add the minced garlic.
  5. Sear the flank steak for about 4-5 minutes on each side or until it reaches your desired doneness.
  6. Remove the steak from the skillet and let it rest for a few minutes before slicing thinly against the grain.
