Homemade Easy Vegan Cinnamon Rolls

These soft, fluffy vegan cinnamon rolls are packed with aromatic cinnamon and topped with a luscious glaze, perfect for brunch or a snack.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup almond milk (or any plant-based milk)
  • 1/4 cup coconut oil (melted)
  • 1 tablespoon vanilla extract
  • 1/4 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 1/2 cup powdered sugar
  • 2 tablespoons maple syrup
  • 1-2 tablespoons almond milk (for glaze)

Instructions

  1. Preheat your oven to 375°F (190°C) to prepare for baking.
  2. Mix the all-purpose flour, sugar, baking powder, and salt in a mixing bowl.
  3. Stir in the almond milk, melted coconut oil, and vanilla extract until a soft dough begins to form.
  4. Lightly flour your countertop and roll the dough out into a rectangle, about 1/4 inch thick.
  5. Brush the rolled-out dough with melted coconut oil and sprinkle the brown sugar and cinnamon evenly over the surface.
  6. Starting from one end, tightly roll the dough into a log.
  7. Cut the log into 8 equal pieces using a sharp knife.
  8. Place the cinnamon rolls in a greased baking dish and let them rise for about 30 minutes.
  9. Bake the rolls for 25-30 minutes, until golden brown.
  10. While the rolls are baking, whisk together the powdered sugar, maple syrup, and almond milk for the glaze.
  11. Once baked, drizzle the glaze over the warm cinnamon rolls and enjoy immediately.

Notes

You can use any plant-based milk instead of almond milk. Nuts or raisins can be added to the filling for extra flavor.
