Easiest Unstuffed Peppers

A quick and comforting meal that combines all the flavors of traditional stuffed peppers without the hassle.

Ingredients

  • 4 bell peppers (any color)
  • 1 pound ground beef (or turkey)
  • 1 cup cooked rice
  • 1 can diced tomatoes (14 oz)
  • 1 onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Cheese for topping (optional)

Instructions

  1. Preheat a large skillet over medium heat.
  2. Cook the chopped onion and ground meat until browned and onions are tender, about 5-7 minutes.
  3. Stir in the cooked rice, diced tomatoes, garlic powder, Italian seasoning, salt, and pepper. Mix well.
  4. Chop the bell peppers and fold them into the skillet mixture until evenly distributed.
  5. Cook for another 5-10 minutes until everything is heated through and the peppers are slightly tender.
  6. Serve with cheese on top, allowing it to melt before serving. Enjoy!
