Crispy Broccoli Cheddar Rounds

A delicious veggie-packed snack with a crunchy exterior and cheesy goodness, perfect for appetizers or snacks.

Ingredients

  • 1 (10oz) bag frozen broccoli rice (about 2 cups)
  • 2 cups freshly shredded cheddar cheese
  • 1 large egg
  • 2 tbsp almond flour
  • Seasoning to taste (garlic salt recommended)

Instructions

  1. Prepare the broccoli rice by cooking it in the microwave according to package directions. Drain and squeeze out excess liquid; set aside to cool.
  2. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Mix the cooled broccoli rice, shredded cheddar cheese, egg, almond flour, and seasoning in a bowl until well combined.
  4. Form about 16 small balls with the mixture and place them on the prepared baking sheet, then gently flatten each ball to form rounds.
  5. Bake for 15 minutes until they start to brown, then flip and bake for an additional 8-10 minutes until golden and crispy.
  6. Serve with ranch dressing or enjoy on their own!

Notes

Drain well to prevent sogginess. Use freshly shredded cheese for better melting. Ensure uniform size for even cooking.
