Slow Cooker Creamy Tomato Basil Chicken

A delightful dish that combines tender chicken with rich flavors of tomatoes and basil in a creamy sauce, perfect for busy weekdays.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (15 oz) diced tomatoes
  • 1 cup heavy cream
  • 1/2 cup fresh basil, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the slow cooker, making sure they’re nestled well.
  2. In a separate bowl, combine the diced tomatoes, heavy cream, minced garlic, chopped basil, Italian seasoning, salt, and pepper. Stir until combined.
  3. Pour the creamy tomato mixture evenly over the chicken breasts in the slow cooker.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.
  5. Once cooked, shred the chicken directly in the sauce using two forks. Serve over your choice of pasta, rice, or enjoy straight from the slow cooker.
