Creamy Garlic Chicken Rice Bowls

A cozy and satisfying dish that combines tender chicken, a luscious garlic cream sauce, and fluffy rice.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper to taste
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 cups cooked rice
  • 1 cup broccoli florets, steamed
  • 1 tablespoon chopped fresh parsley for garnish

Instructions

  1. Cook the chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt and pepper, then add them to the skillet. Cook for 6-8 minutes, stirring occasionally, until fully cooked and golden brown. Remove chicken from the skillet and set aside.
  2. Sauté the garlic: In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Deglaze the skillet: Pour in the chicken broth, scraping up any browned bits. Bring it to a simmer and let it reduce slightly for about 2-3 minutes.
  4. Make the cream sauce: Stir in the heavy cream and grated Parmesan cheese. Cook, stirring frequently, until the sauce thickens, about 3-4 minutes.
  5. Combine chicken and seasoning: Add Italian seasoning, return cooked chicken to the skillet, stirring to coat the chicken in the sauce. Cook for an additional 2-3 minutes until the chicken is heated through.
  6. Serve: Divide cooked rice into bowls, top with creamy garlic chicken, and add steamed broccoli. Garnish with chopped parsley before serving.

Notes

Using high-quality chicken broth will enhance the flavor. Fresh parsley adds a lovely touch of color.
