Cowboy Casserole

A comforting and satisfying dish featuring a hearty blend of ground beef, beans, corn, and potatoes, perfect for busy weeknights.

Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 tsp paprika
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Brown the meat: In a skillet, brown the ground beef over medium heat. Drain any excess fat and set aside.
  2. Combine ingredients: In a slow cooker, combine the cooked ground beef, kidney beans, corn, diced potatoes, diced tomatoes, chopped onion, minced garlic, paprika, chili powder, salt, and pepper.
  3. Mix and cook: Stir well to combine all ingredients, cover, and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
  4. Add cheese: If you’re using cheese, sprinkle it on top during the last 30 minutes of cooking to allow it to melt.
  5. Serve: Once cooked, serve hot and enjoy your hearty Cowboy Casserole!

Notes

For best flavor, ensure the meat is browned well. Adjust cooking time for firmer potatoes, and be generous with the cheese for a melty topping.
