Cottage Cheese Egg Bites

Quick and nutritious egg bites packed with protein, customizable for various flavors, perfect for busy mornings.

Ingredients

  • 1 cup Cottage Cheese
  • 6 large Eggs
  • 1 cup Cooked Bacon, chopped (or turkey bacon or sausage)
  • ½ teaspoon Salt
  • ¼ teaspoon Pepper
  • ½ cup Shredded Cheese (optional, such as cheddar or mozzarella)
  • ½ cup Chopped Vegetables (optional, such as spinach, bell peppers, or green onions)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the cottage cheese, eggs, and chopped cooked bacon in a bowl. Add salt and pepper to taste.
  3. Add cheese and vegetables if desired for added flavor.
  4. Prepare a muffin tin by greasing it with cooking spray or oil.
  5. Fill the muffin cups about ¾ full with the egg mixture.
  6. Bake in the preheated oven for 15-20 minutes until set and lightly golden.
  7. Cool slightly before removing from the tin. Serve warm or store for later.

Notes

Mix until just blended to avoid dense texture. Check doneness with a toothpick.
