Cinnamon Apple Breakfast Quinoa

A delightful and nutritious breakfast combining quinoa, sautéed apples, and cinnamon for a wholesome twist on traditional oatmeal.

Ingredients

  • 1 cup quinoa
  • 2 cups water or almond milk
  • 1 apple, diced
  • 1 teaspoon cinnamon
  • 2 tablespoons maple syrup (optional)
  • 1/4 cup nuts (e.g., walnuts or almonds)
  • 1/4 cup raisins or dried cranberries
  • Pinch of salt

Instructions

  1. Rinse the quinoa under cold water.
  2. Combine the rinsed quinoa and 2 cups of water or almond milk in a medium pot.
  3. Bring the mixture to a boil over medium-high heat.
  4. Reduce the heat to low, cover the pot, and let it simmer for about 15 minutes, or until the liquid is fully absorbed.
  5. Sauté the diced apple with a pinch of cinnamon in a skillet over medium heat until softened, about 5 minutes.
  6. Fluff the cooked quinoa with a fork and stir in the sautéed apples, remaining cinnamon, maple syrup (if using), nuts, and raisins.
  7. Serve warm for a cozy breakfast.
