Chicken Zucchini Stir Fry

A delightful, quick meal featuring tender chicken and fresh zucchini in a savory sauce, perfect for busy weeknights.

Ingredients

  • 1 lb boneless chicken thighs, cut into bite-sized pieces
  • 1 teaspoon cornstarch
  • 1/4 cup light soy sauce
  • 1 teaspoon sesame oil
  • 2 teaspoons sugar (or honey)
  • 1 tablespoon rice apple vinegar (optional)
  • 1 medium zucchini, sliced
  • 3 cloves garlic, smashed and minced
  • 1 tablespoon cooking oil
  • 1 tablespoon oyster sauce
  • Ground black pepper (optional)

Instructions

  1. Combine the chicken pieces with cornstarch, soy sauce, sesame oil, sugar (or honey), and rice apple vinegar in a bowl. Mix well and let it marinate for at least 30 minutes.
  2. Heat the cooking oil in a wok or large skillet over medium-high heat.
  3. Add the smashed garlic to the hot oil and sauté until fragrant, approximately 30 seconds.
  4. Add the marinated chicken to the wok. Stir-fry for about 2 minutes until it’s starting to brown.
  5. Remove the chicken from the pan and set aside. Add the sliced zucchini to the pan, frying it for about 5 minutes until it’s tender but still slightly crisp.
  6. Return the chicken to the pan with the zucchini. Add oyster sauce and pepper (if using) and stir-fry everything together for an additional 2-3 minutes.
  7. Serve the stir fry hot over cooked rice or noodles for a complete meal.

Notes

For best results, don’t overcrowd the pan and ensure the chicken and zucchini pieces are cut uniformly for even cooking.
