Ingredients

  • 1 head cauliflower, cut into florets

  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 cup heavy cream
  • 1 cup vegetable broth
  • Salt and pepper to taste

Instructions

  1. Sauté the onion: In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until soft, about 5 minutes.

  3. Incorporate the spices: Add the garam masala, turmeric, and cumin, cooking for another minute to release their flavors.
  4. Cook the cauliflower: Add the cauliflower florets and pour in the vegetable broth. Stir well to coat the cauliflower in the spices.
  5. Simmer: Cover the skillet and simmer for about 10-15 minutes, until the cauliflower is tender but not mushy.
  6. Add the cream: Pour in the heavy cream and mix thoroughly, allowing it to simmer for another 5 minutes until the sauce thickens slightly.
  7. Season: Taste and season with salt and pepper to your liking.
  8. Serve: Serve warm over cooked rice, topped with a dollop of yogurt if desired.

Notes

Avoid overcooking the cauliflower for the best texture. Adjust seasoning to taste.
