Broccoli Apple Quinoa Salad

A nutritious salad combining quinoa, fresh vegetables, and crunchy nuts, drizzled with a tangy honey mustard dressing.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 cups broccoli florets
  • 1 large apple, diced
  • 1/2 cup toasted almonds, chopped
  • 1/2 cup toasted pecans, chopped
  • 1/4 cup honey mustard dressing
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water in a fine mesh strainer to remove any bitterness.
  2. Cook quinoa by combining rinsed quinoa and water in a medium pot. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes until fluffy.
  3. Prepare the broccoli by steaming or blanching until vibrant green and tender-crisp, about 3-4 minutes.
  4. Combine the cooked quinoa, cooled broccoli, diced apple, toasted almonds, and toasted pecans in a large bowl.
  5. Add the honey mustard dressing and toss gently to combine.
  6. Season with salt and pepper to taste, serve immediately or chill for 30 minutes before serving.

Notes

Rinse quinoa thoroughly to avoid bitterness. You can substitute nuts with sunflower or pumpkin seeds.
