Blueberry Oat Crumble Bars

Delicious and easy-to-make bars packed with oats and fresh blueberries, perfect for a nutritious snack or dessert.

Ingredients

  • 2 cups rolled oats
  • 1 cup almond flour
  • 1/2 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup blueberries (fresh or frozen)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish.
  2. Combine rolled oats, almond flour, melted coconut oil, honey or maple syrup, vanilla extract, cinnamon, and salt in a bowl.
  3. Press about two-thirds of the mixture into the bottom of the prepared baking dish.
  4. Add the blueberries evenly over the crust layer.
  5. Crumble the remaining oat mixture on top of the blueberries.
  6. Bake for 25-30 minutes, or until the top is golden brown.
  7. Cool completely in the baking dish before slicing into squares.

Notes

Use rolled oats for the best texture and substitute almond flour with oat flour if necessary. Sweeten with honey or maple syrup for a vegan version.
