BLT Chicken Salad

A delightful twist on a classic, combining tender chicken, crispy bacon, fresh tomatoes, and creamy mayonnaise, perfect for quick lunches or light dinners.

Ingredients

  • 2 boneless skinless chicken breasts
  • 5 strips of bacon
  • 1/4 cup chopped green onion
  • 1/2 cup quartered cherry tomatoes
  • 1/2 cup mayonnaise
  • 1/2 tsp black pepper

Instructions

  1. Cook the chicken: Place chicken breasts in a medium-sized saucepan and cover with cold water. Bring to a boil, then reduce to a simmer and cook for about 14 minutes.
  2. Prepare the bacon: In a skillet, cook the bacon strips until crispy, about 8-10 minutes. Drain and chop into pieces.
  3. Make the dressing: Combine mayonnaise, chopped green onion, and black pepper in a bowl, and mix well.
  4. Shred the chicken: Let the cooked chicken cool slightly, then shred into bite-sized pieces.
  5. Combine ingredients: In a large bowl, mix the shredded chicken, bacon pieces, quartered tomatoes, and dressing until evenly coated.
  6. Serve: Enjoy immediately or refrigerate for later.

Notes

For a lighter version, you can use Greek yogurt instead of mayonnaise. Substituting rotisserie chicken can save prep time if you’re in a rush.
