Beef Stew

A hearty beef stew filled with tender chunks of beef, vibrant vegetables, and rich flavors, perfect for cozy evenings and family gatherings.

Ingredients

  • 2 lbs beef chuck, cut into 1-inch pieces
  • 4 medium potatoes, diced
  • 3 carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Sear the beef: Heat olive oil in a large pot over medium heat. Add the beef and brown on all sides, about 5-7 minutes.
  2. Add aromatics: Stir in chopped onion and minced garlic. Cook until softened, about 3-4 minutes.
  3. Incorporate tomato paste: Mix in tomato paste and cook for another minute.
  4. Combine ingredients: Add beef broth, diced potatoes, sliced carrots, thyme, bay leaf, salt, and pepper. Stir well.
  5. Simmer the stew: Bring to a simmer, cover, and reduce heat to low. Cook for 6 to 8 hours, until beef is tender.
  6. Finish and serve: Remove the bay leaf before serving and adjust seasoning if necessary.

Notes

Brown the beef for depth of flavor and ensure vegetables are uniformly cut for even cooking. Reheat leftovers gently to preserve texture.
